This tea is excellent but you need to be careful how you brew it. You can't boil it or let it brew for a long time. Your water should be from 165 to 200 degrees. The hotter the water the shorter the brew time. If you brew it too long or too hot, it will release too much of the nasty bitter tasting tannins. They dissolve at 176 degrees. Now, a little is ok, but too much gives you that puckered feeling in your mouth. I brew mine at 185 degrees (which is 2+ cups of water in the microwave for about 4 3/4 minutes) for 2-5 minutes. Take out the leaves and you're good to go. You can adjust the times and temps to your own taste, but it will really taste bitter if it's too hot or brewed too long. But it has a nice alfalfaey (Im from Nebraska) taste when done right.
